Australiana 2


Pikelets for breakfast with (not necessarily though ours was) French raspberry jam.

1 cup SR flour
1 tbs of caster sugar
1 egg
3/4 cup of milk

Mix it all together, let it sit for a few minutes (maybe 5) then cook in small batches, pikelets about the size of ummm a segmented tennis ball, or smaller! Eat hot with jam.

What says home, be it Australia or elsewhere, to you?

It's got to be homemade Scotch broth, with pearl barley, yum!

when we lived in London there were a few things that would make the eyes light up: 1. crusty white toast, dripping with real butter and vegemite. 2. lamingtons. a girl started making them fresh and selling them at the australia shop at covent garden and 3. while not food from the cooks kitchen, twisties and a caramello koalas will always say Australia to me!

Love your pikelets! I'm on a health kick and they just don't taste the same with wholemeal flour

Oh yum you are making my mouth drool! The sponge and then this - oh la la. I think I just need to learn how to make sponge. WIll you share the recipe?
